Fred Kniffin is the owner and operator of Liberty Dogs San Antonio, a dog training business dedicated to transforming challenging dogs into calm, reliable companions. Growing up in Kansas, dogs were an integral part of Fred’s family life. While most were daily companions, one in particular—a little orange-and-white Brittany named Brandy, who served as his trusted hunting partner and deepened his understanding of the human-canine bond.
Fred’s journey into professional dog training began in 2014 when he and his wife Pam became empty nesters and adopted Tator, a border collie whose remarkable abilities inspired Fred to pursue a deeper understanding of canine behavior and training techniques. What started as curiosity quickly evolved into a passion and career focused on companion dogs—those that share our homes and lives.
Fred’s training philosophy and methods are heavily influenced by renowned dog trainers Chad Mackin and Jay Jack. He embraces Mackin’s principle: “You’re not done training your dog until you can trust him at liberty.” This philosophy reflects Fred’s commitment to developing dogs that are not only obedient but truly trustworthy in any environment.
His passion for dog training was further ignited when someone once told him, “I wish my dog was as nice as yours.” That moment crystallized his purpose: to help other dog owners experience the joy and pride of having a well-trained companion. For Fred, training dogs is a labor of love, and he takes particular pride in working with even the most challenging dogs, helping them become the reliable companions their owners desire.

About PepperJack(PJ)
PepperJack, affectionately known as PJ, is more than just a companion—he’s my dedicated training assistant and an exceptional example of the Epagneul Breton, or French Brittany breed. Born October 3, 2021, at the renowned Plum Creek Kennels in Fredericksburg, Texas, PJ joined our family that December and has been family ever since.
In June 2022, PJ took over from Tator (our original Canine Training Officer), stepping into the role with the enthusiasm and intelligence that define his breed. As the smallest of the pointing breeds, the French Brittany (Epagneul Breton) combines a compact, well-knit frame with remarkable agility and vigor. PJ embodies all of these qualities perfectly: built harmoniously on a solid foundation without unnecessary weight, maintaining an elegant appearance that belies his impressive working-dog capabilities.
What makes PJ such an outstanding training assistant is his bright, intelligent expression and natural aptitude for the work. His Continental spaniel-type head and short tail are classic breed characteristics, but it’s his sharp mind and eager disposition that truly set him apart. Whether we’re working with other dogs or demonstrating training techniques, PJ approaches every task with unwavering focus and enthusiasm.
His compact build allows him to move with precision and grace, while his vigorous nature ensures he can keep up with the demands of a full training day. The intelligence that shines through his bright eyes makes him not only an excellent learner but also a wonderful teaching tool—other dogs respond well to his confident yet gentle demeanor.
PJ’s journey from a puppy at Plum Creek Kennels to my trusted training partner has been remarkable to witness. He continues to grow in his role, demonstrating daily why the French Brittany is celebrated as both an exceptional hunting companion and a versatile working dog. His contribution to our training programs is invaluable, and his presence brings both professionalism and joy to every session.
